- 200g dry biscuits
- 80g unsweetened cocoa powder
- 3 egg yolks
- 100g butter
- 1 cup barley
- 80g sugar
- 30g almonds
To prepare the barley chocolate salami, the first thing to do is to prepare the barley cup.
Set it aside and let it cool.
Melt the butter and let it cool.
Now you can coarsely chop the cookies and almonds with a meat grinder or mortar.
In another bowl, put the egg yolks and the sugar and beat them with an electric mixer or a whisk until you obtain a foamy and homogeneous cream. At this point, add the melted butter and the barley, which in the meantime has cooled, and the cocoa. Then continue mixing and, when the mixture is creamy, add the chopped cookies and almonds.
The dough for your chocolate salami is almost ready: you just need to knead it with a spatula for a few minutes, then you can roll it on a piece of parchment paper giving it the typical shape of a salami. Now put the barley chocolate salami in the refrigerator and leave it there for 3 hours, so that it solidifies well. If you prefer a firmer, colder consistency, place it in the freezer rather than the fridge and leave it for a few hours. Once out of the fridge or freezer, place your barley chocolate salami on a tray and cut into slices before serving – just like real salami!
