- 60 ml of coffee (1 full cup)
- 400 grams of flour 00
- 100 grams of sugar
- 120 g of butter
- 2 eggs (1 whole + 1 yolk)
- 6 g baking powder
- 1 pinch of salt
- 2 tablespoons powdered sugar
For the coffee biscuit recipe, the first thing to prepare is, as always, the coffee.
We have chosen Stromboli for grandma Anna, a rich and intense blend that will leave not only the great taste of coffee but also its aroma.
Once prepared, pour the coffee into the cup and leave to cool.
In the meantime, you will have taken the butter out of the refrigerator because it will be used soft (at room temperature)
Put all the ingredients for the coffee cookies in a bowl, leaving the yeast and coffee for last.
Now mix them well, first with a spoon, then work the dough with your hands, until you get such a consistency that you can form a ball. Leave the dough in the bowl, cover it and put it in the fridge for half an hour.
Meanwhile, turn on the oven to 150 degrees, static, and line a baking pan with parchment paper.
After half an hour, start shaping your coffee cookies: take small amounts of dough and form balls about 2.5 – 3 cm in diameter with your hands.
Arrange the balls in a row in the mold, leaving a distance of about 2 fingers between them. The baking time is 15 minutes, but you can tell by the browning when the coffee cookies are baked.
If they are not golden, leave them in the oven for a few more minutes.
You will be able to taste the fragrance emanating from the freshly baked cookies, but only taste them once they have cooled.
