For the Coffee Potato Cake recipe, make the coffee first! A beautiful cup of 101CAFFE ‘Napoletano Premium, in homage to the local tradition where this cake is called “Gattò”.
Put the coffee aside and prepare the mashed potatoes with 600 grams of potatoes; the remaining 50 grams cut them into very thin slices and set aside.
To make the mash, the potatoes should be washed and peeled, steamed or boiled in water until very soft, then mashed in a bowl with a potato masher . Add 30 grams of butter, a cup of coffee and 50 grams of parmesan and mix well with a spoon. Then add the eggs, a teaspoon of salt, a pinch of pepper, a pinch of grated nutmeg and half the potatoes that you cut into thin slices. Mix everything well and place in a baking dish, leveling with a fork. Now sprinkle the surface with the remaining potato slices, the remaining part of grated parmesan and the remaining part of flake butter and a pinch of breadcrumbs. Your “Gattò” is ready to be baked at 180 degrees for about 30 minutes. Once your coffee potato cake is cooked, you can enjoy it hot as a unique, hearty and energizing dish!
