Ingredients for 4 persons
- 500ml whole milk
- 50 ml espresso coffee (= 1 cup)
- 50g cornstarch
- 80 grams of powdered sugar
- 2 eggs
- Whipped cream to taste
- 8 coffee beans
For your coffee pudding recipe, the first thing to prepare is…. coffee! We recommend using a decaffeinated coffee, such as 101CAFFE ‘Mezdè Dec, so even children can enjoy it.
Make it with a pod machine or a moka pot and set it aside to cool.
In a bowl put the eggs and icing sugar and mix with a whisk until the mixture is homogeneous.
Now put the cornstarch in the same bowl a little at a time and keep mixing.
Then add the coffee, stirring constantly. Now heat the milk in a saucepan (without bringing it to a boil) and pour it into the same bowl, stirring with a whisk.
Put all this delicious mixture in the saucepan and bring to a boil, stirring constantly. As soon as it begins to boil, remove from heat and let cool. You can now shape your coffee puddings by pouring the mixture into 4 pudding molds (the inside walls of which should be moistened with a little water).
Then put them in the fridge and leave there for at least 3 hours. At this point, you can transfer the coffee puddings to 4 saucers and decorate them with a whisker of whipped cream. Two coffee beans will give the final touch to this dessert, to be enjoyed teaspoon after teaspoon…
