Ingredients for 4 persons
- 320 g of rice
- 12 prawns
- 1 cup of coffee
- 2 shallots
- 100 g of butter
- 1 liter of vegetable broth
- 2 tablespoons extra virgin olive oil
- Salt to taste
This time the preparation of the coffee will not be the first thing to think about, since in the recipe for risotto with coffee and prawns, the coffee is put on when it is hot.
Prepare the vegetable broth. Chop the shallot and brown it in a saucepan with a teaspoon of oil. Add the rice and lightly toast it.
Meanwhile, peel the prawns and put them in a pan in which you will have very well heated a tablespoon of oil. Hit them 30 seconds on each side then set them aside.
Now is the time to cook the grilled rice with the shallot, adding the broth little by little and stirring often. When the cooking is almost done, prepare a cup of coffee and pour it into the rice. For the coffee and prawn risotto recipe, we chose Gran Milano coffee, a blend from the 101CAFFE’ Premium range with 80% Arabica, which transfers the perfect aromatic notes for a dish of this type to risotto. Once the coffee has been poured, add the cold butter and whisk everything together. It’s time to arrange the coffee and the prawn risotto on the plates, placing the prawns in the center (3 for each dish).
A light dusting of ground coffee will add the finishing touch to this elegant and exquisite dish.
