- 250 ml (= 5 cups) of coffee
- 250ml milk
- 4 eggs
- 180 grams of sugar
- 120 g of butter
- 120 grams of flour
- 8 gr of baking powder (half a sachet)
- Powdered sugar for garnish
The first thing to do to prepare your Wake Up Cake is, as always, the coffee, which will be cooled while you prepare the rest of this exquisite interpretation of the Magic Coffee Cake.
Take 2 bowls and break the eggs, separating the whites from the yolks; in one of the two bowls put the yolks, in the other the egg whites which are whipped with an electric whisk; not quite though…
In the bowl with the egg yolks, add the sugar and, still with the electric whisk, whip them until you obtain a pleasant and frothy cream.
Heat the butter until it melts (should be lukewarm, not hot)
Also heat the milk.
Turn on the oven to preheat it to 150° (static)
Now, in the bowl with the egg yolks beaten with the sugar, add the butter and the flour little by little, continuing to mix with a whisk. When everything is fairly well mixed, add the milk, the coffee and incorporate the previously whisked egg whites. Stir again with the whisk until everything is well mixed.
You can now pour the mixture of this magic Wake Up Cake into a round mold lined with parchment paper: put it in the oven and cook for about an hour and twenty minutes.
After 80 minutes of cooking, do the toothpick test in the center to check if it is cooked, you can take it out of the oven and let it cool. Place your Coffee Wake Up Cake on a serving plate. As an option, you can decorate the cake with a light dusting of powdered sugar or serve it as is, in all its natural beauty and goodness.
